Easter Chocolate Bark Recipe from Nutritionist Emily Barlow

This takes less than 5 minutes to put together, pop into the freezer for 20 mins and there’s no baking involved, PLUS everyone gets to decorate their own piece. Win win!

 

WHY DARK CHOCOLATE?

– Dark chocolate (70%+) is rich in antioxidants and magnesium.

 

WHY COCONUT?

– Shredded coconut adds fibre and a subtle natural sweetness… plus it looks gorgeous on top!

 

WHY DRIED CRANBERRIES?

– A natural source of antioxidants and a great way to add a little sweetness without relying on refined sugar.

 

WHY NUTS & SEEDS?

– Almonds, cashews and pumpkin seeds provide healthy fats, plant-based protein and minerals like zinc and iron to keep you satisfied and energised.

  

The Recipe:

200g dark chocolate (80%+ cocoa), melted

¼ cup mixed nuts (almonds, pistachios, cashews)

2 tbsp pumpkin seeds

2 tbsp dried cranberries

2 tbsp shredded coconut

¼ cup mini eggs (optional)

Pinch of sea salt

 

Steps:

  1. Melt chocolate and pour onto a lined baking tray
  2. Scatter all toppings over the top
  3. Refrigerate for 20 minutes until set

Break into pieces and enjoy!
