INGREDIENTS
– 2 large carrots
– 1/2 cup desiccated coconut
– 1 cup walnuts or pecans
– 1/4 cup melted coconut oil
– 10 pitted dates
– Zest of 1 orange
– 1/2 tsp. grated ginger
– 1 tsp. cinnamon
– 1 tsp. vanilla
– pinch of salt
Topping
– 1 cup coconut yoghurt
– 1tbsp. topping of your choice walnuts, almonds, lemon zest
METHOD
1. Blend all ingredients (except walnuts) in a food processor until it's like a thick cake mix.
2. Roughly crush the walnuts and fold through the mixture
3. Press cake into a mould of your choice and place in the fridge overnight.
4. Ice with coconut yoghurt and topping of your choice
