Ingredients
- 2 cups pitted dates, soaked for 20 mins
- 1 cup raw walnuts
- 1.5 cups oats
- 2 scoops raw plant protein (vanilla, optional)
- ¾ cup desiccated coconut
- 1 tbsp 100% pure maple syrup
- ½ cup coconut oil
- 3 tbsp pepitas
Method
- Place strained dates, oat, walnuts, protein powder, coconut, coconut oil and maple syrup in your food processor.
- Blitz for 15-20 seconds until blended together.
- Add pepitas and pulse 2-3 times until mixed through.
- Line a shallow, small baking tray with baking paper. Press mixture into the tray and set in the freezer. Remove and cut into small bars. ENJOY!
